Wild Rice Chicken Casserole

1pkgUncle Ben's original recipe of wild and regular rice
1/2cchopped onion
6ozsliced mushrooms
1 1/2cchicken broth
1 1/2clight cream
3ccooked diced chicken
1/4cdiced pimento
2tbspsnipped parsley
1/2cblanched sliced almonds
Prepare the rice. Cook the onion in the butter until tender - not brown. Remove from heat. Stir in the flour. Drain the mushrooms, reserving liquid. Add enough chicken broth to the mushroom juice to make 1 1/2 cups. Gradually stir into the flour mixture. Add the cream. Cook and stir until thickens. Combine everything in a 2 qt casserole. Sprinkle with the almonds. Bake 350 for 45 minutes or until bubbly.
