3tbspbutter, melted
1/2clowfat milk
1/2cLowfat cottage cheese
2tbspDijon or honey mustard
1/4tsppepper
1/4tspkosher salt (I omitted this)
3Eggs
1cshredded cheddar cheese divided
1cchopped ham
4green onions, chopped
Crush crackers, add melted butter and mix. Press mixture into and up the sides of a standard 9" pie pan. Bake 10 minutes.

Whisk milk, cottage cheese, mustard, salt & pepper, and eggs. Scatter 1/2 c. cheddar over bottom of crust. Pour in egg mixture. Toss other 1/2 c. cheddar w/ ham and scallions. Scatter over egg mixture, pressing down gently with back of spoon or spatula. Put tray on bottom rack to catch drips, bake on middle rack until eggs are set and golden; about 50 minutes.

We had a salad and white wine with it--and had a great meal! Enjoy!
