Loaded Baked Potato Soup

5Lbmedium potatos, peeled/cubed
1Onion, chopped
2Cchicken broth
1Cshredded cheddar
1Clow fat plain Greek yogurt
Potatos and onions in pot. Cover with water and cook until tender. Drain and set aside.

Melt 2/3 c. butter, stir in 2/3 c. flour. Pour in 2 c. chicken broth and 4 c. milk. Stir constantly until thick. Add potatoes and onions. Mix in 1 c. shredded cheddar, 1/2 container yogurt (1 cup), and a pkg of pre-cooked real bacon pieces. Salt and pepper to taste. Thick, creamy and delicious!
