New Orleans Bread Pudding

10ozstale French Bread
1Ccoconut, shredded
1CPecans, chopped
1Tbspcinnamon, fresh, grated
1Tbspnutmeg, grated
Tear the French bread into medium-sized chunks and toss in a large mixing bowl, along with the coconut, pecans, raisins, cinnamon, and nutmeg.

In a separate mixing bowl, lightly beat the eggs with the milk and vanilla. Add the sugar and stir until dissolved. Pour the egg and milk mixture into the bowl with the dry ingredients and mix lightly with your fingertips so that the mixture is moist, but not soupy. Allow this to soak for 30 minutes. Butter a 9 X 12" baking dish. Pour the pudding mixture into the buttered baking dish, then place on the center rack of your unheated oven.

Set your oven to 350° F and bake until the top of the pudding is golden brown, about 1¼ hours. With an oven mitt, remove the pudding from the oven and allow it to cool 30 minutes before serving.
