2 1/2Cwater
25oz pkt Vigo yellow rice
1lbAndouille cut into 1/2 inch discs
1lbcooked shrimp 70-90
1candiced tomato
1medonion, chopped
1/2tbspchopped parsley
1pkgfrozen peas
Bring water, sausage, tomatoes, onion and parsley to boil in a large skillet with a tight lid. Add rice. Reduce heat and simmer for 15 minutes.

Stir in shrimp and peas (I pre-cooked "steamer" peas). Add shrimp. Simmer for an additional 5 minutes. If peas are not cooked OR shrimp not cooked, add 5-10 minutes. Shrimp should be pink.

Let stand 5 minutes and serve. Makes 4 servings.
